This salad recipe is really tasty. We love the special and original touch of the poppy seed vinaigrette. A great discovery!
SPINACH SALAD WITH AVOCADO AND STRAWBERRIES
Makes 6 to 8 servings.
INGREDIENTS
• SALAD
6 cups (900 g) fresh baby spinach
1 pint (300g) strawberries, hulled and sliced
2 avocados, diced
4 ounces (113 g) crumbled goat cheese
1/4 cup (40 g) sliced almonds, toasted
1/2 small red onion, thinly sliced
poppy seed vinaigrette (recipe below)
• POPPY SEED VINAIGRETTE
1/2 cup (120 ml) olive oil
3 tbsp (45 ml) apple cider vinegar
2 tbsp (30 ml) maple syrup
1 tbsp (15 ml) poppy seeds
a pinch of mustard powder
salt and pepper
PREPARATION
To make the poppy seed dressing, whisk all ingredients until well combined.
Mix all salad ingredients, add desired amount of dressing and toss again.
Serve immediately.
